Why it is laid out this way
- The two piers sit on the centre line at 9′ and 23′ — the table is placed to pass between them, which is the only arrangement this room seats cleanly.
- Candles and low arrangements carry a table-top elevation, so they read as being ON the table in 3D rather than standing on the floor.
- The apse takes the pour station and the venue's own tasting counter keeps its stools — nothing rolls into a room this size that does not have to.
